Through the Looking Glass - The Library
Wellington-based cocktail legend Peter Lowry at The Library has kindly shared the recipe for 'Through the Looking Glass' - a classic champagne cocktail, brightened up with a fruity, floral twist...
Ingredients:
10mls Southward x The Library Bramble Gin (or sloe gin)
15mls Six Barrel Hibiscus Soda Syrup
10mls tangelo liqueur (or Cointreau)
Chocolate bitters (or Angostura bitters)
Sugar cube
Prosecco
Orange rind
Method:
Dash bitters on sugar cube and place in the bottom of your glass
Add gin, Hibiscus syrup and tangelo liqueur
Top up with prosecco
Garnish with orange rind

30mL Honest Six Spiced Rum30 mL Vermouth15 mL Hibiscus SyrupTwisted Orange Peel
Build in a short glass over ice. Squeeze and twist an orange peel in for your garnish.
Galgo
30mL Grapefruit Syrup
30mL vodka or gin
Soda water to top
Lime slices
Rosemary Sprig
In a tall glass with lots of ice add the syrup, spirit and soda water, stir and garnish with lime slices and a fresh sprig of rosemary.
Clementine
30mL Raspberry & Lemon Syrup
30mL Aperol
30mL Lime juice
Egg (or aquafaba)
Build all ingredients in a cocktail shaker over ice, shake well, strain into a cocktail glass and garnish with a burnt orange peel and/or a sprig of thyme.
